White Chicken Chili
... let me start off by saying YUMMY!!!! This is the best chili I've ever made <3
Ingredients:
1. 3 Chicken Breast - The bigger the better if you like a lot of chicken. Free Range and Organic.
2. 1 Medium Onion - Diced... I can't find organic onion anywhere!
3. 2 Packets of White Chicken Chili - Normally I would of seasoned it from scratch but I happened to have these seasonings lying around. If you make it from scratch use: 1 tsp garlic powder (or more to taste), 1 tsp of cumin, 1 tsp of oregano, 1/4 tsp of cayenne pepper and salt/pepper.
4. 1 can of Great Northern Beans - Organic
5. 1 can of Black Beans - Organic
6. 1 can of Red Kidney Beans - Organic
7. 1 can of Diced Tomatoes - Organic
8. 1 larger sized can of diced green chilis, or 2 roasted and diced serrano Mmmmm
9. 1/2 cup of Sour Cream - More if you prefer - Organic
10. 1/2 cup of Heavy Whipping Cream - More if you prefer - Organic Valley.
Combine all of this (EXCEPT for the sour cream and heavy whipping cream - add once done cooking) in a large crockpot. Cook on low 7-8 hours. Be sure to stir while cooking occasionally. Once cooked, remove the chicken breasts, shred them with a fork, add back to the crockpot, turn off the crockpot, add the sour cream and heavy whipping cream, stir.
Toppings:
I LOVE Green Onion and Cilantro. I don't add the toppings to my chili mixture, I add them per serving, so I added green onion, cilantro and cheese to my chili and served along with corn bread.
