Slow Cooker Taco Chicken Chili


Slow Cooker Taco Chicken Chili: I have made this SO MANY TIMES. We love it :)

Ingredients:
1 onion, chopped
2 (16 ounce) can chili beans
2 (16 ounce) can red kidney beans
2 (15 ounce) can black beans
2 (15 ounce) can whole kernel corn
2 (8 ounce) can tomato sauce
1 (12 fluid ounce) Chicken Broth
2 (10 ounce) cans diced tomatoes with green chilies
2 (1.25 ounce) package taco seasoning (I use hot and regular)
3 or 4 whole skinless, boneless chicken breasts
shredded Cheddar cheese (optional)
sour cream (optional)
green onion (optional)


In my opinion the BEST tasting is to top it with cheddar cheese and green onion!

I serve my chili along side of Trader Joe's Cornbread (box mix) or Trader Joe's Buttermilk Biscuits that you bake (by the milk) and both are delish!

Directions:
Place the chicken breast in the crockpot, add both packets of seasoning then the entire diced onions. You want these flavors cooking in the chicken! The add the chili beans, kidney beans, black beans, corn, tomato sauce, chicken broth in a slow cooker. Set slow cooker for low heat, cover, and cook for 7-8 hours. Remove chicken breasts from the chili, and allow to cool long enough to be handled. Use your fork and on a plate shredded chicken, then stir back into the soup. Turn off the crockpot and let it rest 30 minutes.

Serve and enjoy!!!!

*makes 2 large tupperware containers worth of chili !!! Hand some out or freeze the rest. I do both :)


Spinach and Beef Stuffed Shells


*As requested Jaime lol... Yesterday I made Stuffed Shells. Here is the recipe.

Ingredients:
1 box of shells.... I can't find whole wheat anywhere :-( 
1 jar of pasta sauce
1lb extra lean ground beef or turkey
mozarella cheese - to taste
1 regular sized container of ricotta cheese
1 bag of frozen spinach 

Brown the meat, drain, add in the ricotta cheese and drained spinach, also some salt/pepper/garlic powder to taste.

Take the cooked and obviously drained shells, spray an oven pan with pan and fill the shells with the meat mixture until the pan is full of shells, cover with the mozarella cheese and top with the pasta sauce. COVER WITH FOIL. Bake at 350 for 30 minutes.

Ingredients

8 skinless, boneless chicken breast halves - cubed1/4 cup margarine2 (.7 ounce) packages dry Italian-style salad dressing mix2 (8 ounce) packages light cream cheese2 (10.75 ounce) cans condensed cream of chicken soup2 (10.75 ounce) cans condensed cream of mushroom soup

Serve With Whole Wheat Whole Grain Egg NoodlesPeasCrescent Rolls

Directions

Put chicken, margarine and dressing mix in slow cooker; mix together and cook on low for 5 to 6 hours.

Add cream cheese and soup, mix together and cook on high for another 1/2 hour or until heated through and warm.


Overnight Steel Cut Oatmeal


Serves about 4-6.

Ingredients:
6 cups of water.
1 cup of organic steel cut oatmeal (ralphs carries this, sprouts too!)
A LITTLE dash or sea salt.

Combine both in a pot. Bring to boil.

Once this comes to a boil, turn off the heat.
Remove from the burner.
Add a lid.
Leave soaking overnight. Stir in the morning. Enjoy. 

This is now my 3rd batch and it comes out PERFECT everytime.
Mmmmmmmmmm.

Steel Cut Oatmeal gives me SO much energy and keeps me full for HOURS.

I like to add raw milk, cinnamon and organic brown sugar on top of mine <3
Sometimes I add raw honey or coconut oil to mine too... Once I get refined coconut oil I will add that to my everyday batch :)



White Chicken Chili


White Chicken Chili

... let me start off by saying YUMMY!!!! This is the best chili I've ever made <3


Ingredients:

1. 3 Chicken Breast - The bigger the better if you like a lot of chicken. Free Range and Organic.
2. 1 Medium Onion - Diced... I can't find organic onion anywhere!
3. 2 Packets of White Chicken Chili - Normally I would of seasoned it from scratch but I happened to have these seasonings lying around. If you make it from scratch use: 1 tsp garlic powder (or more to taste), 1 tsp of cumin, 1 tsp of oregano, 1/4 tsp of cayenne pepper and salt/pepper.
4. 1 can of Great Northern Beans - Organic
5. 1 can of Black Beans - Organic
6. 1 can of Red Kidney Beans - Organic
7. 1 can of Diced Tomatoes - Organic
8. 1 larger sized can of diced green chilis, or 2 roasted and diced serrano Mmmmm
9. 1/2 cup of Sour Cream - More if you prefer - Organic
10. 1/2 cup of Heavy Whipping Cream - More if you prefer - Organic Valley.

Combine all of this (EXCEPT for the sour cream and heavy whipping cream - add once done cooking) in a large crockpot. Cook on low 7-8 hours. Be sure to stir while cooking occasionally. Once cooked, remove the chicken breasts, shred them with a fork, add back to the crockpot, turn off the crockpot, add the sour cream and heavy whipping cream, stir.

Toppings:
I LOVE Green Onion and Cilantro. I don't add the toppings to my chili mixture, I add them per serving, so I added green onion, cilantro and cheese to my chili and served along with corn bread.

Homemade Hot Cocoa


Sooooo tonight its freezing cold outside because of this amazing wind and I wanted cocoa but I was out my usual cocoa ready made mix (which im sure was garbage anyway) BUT I have an entire thing of "Unsweetened Cocoa" so I decided what the heck, and made cocoa from scratch... Well here I sitting drinking my yummy creation.

Ingredients:
Organic FULL FAT Milk
Organic Half n'Half
Organic Granulated Sugar
Unsweetened Cocoa Powder - I get mine from Sprouts.

In a medium sauce pan add 1 cup of milk, 1/2 a cup of half n'half and 2 teaspoons of sugar. Bring to a low boil. Whisk in 1 teaspoon of cocoa powder (maybe 1 more if you like it REALLY chocolately) turn off the heat and continue whisking until perfectly blended. Add a bit more half n'half and sugar if needed. Pour in a mug.

Ingredients:
Unsweetened cranberry juice (2 oz or 1/4 of a glass); make sure you read the label, as many people purchase the sweetened cranberry juice by mistake. Even though pure cranberry juice is very bitter, it does contain around 8 grams of sugar per 6 ounces. This is usually okay. The type of cranberry juice you do not want to use is the cranberry mixed with apple juice and other juices, bringing the sugar levels up to 28 grams per 6 ounces. Do not be concerned if your cranberry juice is not organic, as it is very difficult to find organic cranberry juice.

Spring water (6-8 oz).

CLEANSES YOUR LIVER - Lemon Juice—1/3 of a fresh lemon or 1 tsp of lemon powder. If you have a history of kidney stones, use a whole lemon or 3 tsp of lemon powder. Both the cranberry juice and eating a grapefruit each day will also help prevent kidney stones.

MIRACLE INGREDIENT - Apple cider vinegar (1 tsp-2tsp ); adjust amount to your taste, as this might be too strong for some people. CLEANSES YOUR KIDNEYS - ORGANIC Apple juice (maximum amount is 1/4 cup). ENJOY!!!

Directions:
DRINK 1 SERVING OF THIS 1-2 TIMES A DAY... START OFF WITH ONLY 1 A DAY FOR HALF A MONTH!
